This longitudinal consumer study of the explores the acceptability of insects across the past five years in the United States.  While it might be surprising to some, edible insects is a rapidly growing industry in the United States and across the world.  Insects can provide high quality nutrition to humans while leaving behind a very small agricultural footprint in terms of the use of land and water.
